roast vegetable pasta

Adapted from a Weight Watchers recipe. Extrememly tasty, filling, and gets you a good chunk of your five fruit and veg portions/day in one sitting.

1 red pepper
1 green pepper
1 1/2 onions
spray oil
2 tomatoes, chopped
small handful basil, chopped
1 clove garlic, minced
4 tbspns cream cheese (I use full fat. I tried the low fat stuff once, but... meh).
salt and pepper to taste
2 cups penne pasta

chop peppers and onions into chunks. Spray with oil, and roast for about 45 mins at 400F. I find it's worthwhile checking them once in a while to make sure they get cooked through and slightly charred, but not cremated.
Cook pasta, drain, return. Add all the other ingredients to pan and stir. Serves 2 generously.

I make it 6 1/2 WW points per person.

A delicious alternative is to add some sliced smoked salmon.

This sounds lovely. If it ever gets cool enough here to turn on the oven I will try it!
